In Thailand, giant freshwater river prawns are highly sought after – it is considered a delicacy and a prestigious food that is something nearly all Thais would love to eat. As these giant prawns are really big-headed, there is relatively little meat for the size of the prawn. Instead, the real treasure lies within the head.
